Stop using '20 minutes per pound' for your turkey -- here's the actual USDA-based formula

A lot of turkey advice still floats around a flat "20 minutes per pound" rule. USDA FSIS roasting guidance and university extension charts actually use a tiered formula -- minutes per pound go down as the bird gets bigger, so a flat multiplier overestimates cooking time for large turkeys.

Rough tiers at 325°F, unstuffed: about 15 minutes per pound for an 8-12 lb bird, down to roughly 11-12 minutes per pound for a 20-24 lb bird. Stuffing adds time -- figure on 15-25% more. Whatever the calculated time says, always confirm doneness with a meat thermometer reading 165°F (74°C) in the breast and thigh -- time is a planning estimate, not a safety check.

Spatchcocking (removing the backbone and flattening the bird) cuts roasting time substantially by increasing surface area exposed to heat. Deep-frying is faster still and follows its own rule of thumb -- roughly 3-4 minutes per pound -- largely independent of the tiered oven-roasting scale.

How long to brine a turkey per pound: dry brine

Dry brining means rubbing salt directly onto the skin -- about 1 teaspoon of Diamond Crystal kosher salt per pound (roughly half that if using table salt), applied 24-48 hours ahead in the fridge, uncovered. It produces crispier skin and takes no extra fridge space beyond the bird itself.

Dry brine vs wet brine turkey ratio: wet brine

Wet brining submerges the turkey in a salted water solution -- about 1 cup of kosher salt per gallon of water, with enough water to fully cover the bird (roughly 1 gallon per 5 lb as a rule of thumb), soaked 12-24 hours. It adds more moisture but needs a large container and more fridge room than a dry brine.

The Turkey Brine & Roasting Time Calculator combines both calculations -- roasting time by weight and method, plus brine amounts and timing -- in one place, instead of the usual two separate tools.
